Preparing includes the purchasing (or harvesting), the cleaning and the carving of your fruits and vegetable.
Buying
Good dried fruits start with good fruits: more the fruit is mature, more it will dry faster and taste sweeter. The fruit can come from your garden, a local producer or from your favourite supermarket. For the fastest and easiest preparation, the fruits should be untreated so you can dry them with their skin.
Cleaning
Most fruits you buy were touched by a large number of people, they have passed through many stores, ... so they must absolutely be completely washed before carving.
Carving
Useful kitchenware for carving fruits are:
- A sharp knife blade
- A peeler to peel skinned fruits
- A mandolin to cut fruits into slices: it is really important that all fruit slices have same width to dry equally on the dehydrator trays
- An apple corer to remove apple and pear cores
